Organic Malloreddus (Gnocchetti Sardinian-style)
Malloreddus, also known as Sardinian gnocchetti, are without a doubt the most classic of all Sardinia's traditional pastas. They are grooved shells, about 1.5-2 cm long, made from durum wheat flour and water. Malloreddus have always been the most common traditional dish made in Sardinia on all major occasions, on feast days and at local festivals. They are also served at wedding receptions. Sardinian cuisine is made up of simple, tasty dishes, the result of ancient traditions that have not changed over the centuries. On this island, preparing food is almost a ritual. The ingredients and methods of preparation of Sardinian pasta dishes, never too elaborate, reveal their farming and shepherding traditions. San Lorenzo has reinvented an old Sardinian recipe by using durum wheat flour grown only in Italy with organic farming methods.
